The Deweer family washes all the wheels in a saltwater brine for approximately a month before sending out to Kaasafineurs Van Tricht. At its young age, Funky Monk is pungent while remaining lighthearted. The rind is not too overbearing in odor, and just slightly tacty making it easy to work with. Its texture is fudgy with a luscious mouthfeel. The flavors of cooked onions and sweet cream help to lossen up the funkiness of this Abbey style cheese.
